Atlas Oyster House presents 'The World is Your Oyster' dinner event

Atlas Oyster House and Executive Chef Jason Hughes hosts "The World is Your Oyster," a family-style oyster dinner featuring special guests Grayson Bay Oyster Co. and Pensacola & Perdido Bays Estuary Program, on Thursday, March 12, beginning at 5:30 p.m.
The event showcases Chef Hughes' Gulf-inspired oyster recipes alongside stories and experiences from his culinary career. Representatives from Pensacola & Perdido Bays Estuary Program and Grayson Bay Oyster Co. discuss their respective missions, history and the importance of restoring the Pensacola and Perdido Bays watersheds.
The five-course menu opens with an Atlas house salad and bread service, followed by an amuse bouche of half-shell Tidal Guides oysters from Pensacola with bowfin caviar and prosecco-pink peppercorn mignonette, paired with Cremant D'Alsace Pierre Sparr Brut Rose.
The first course features smoked oyster vol-au-vent with Gulf Coast oysters, applewood bacon and Portobello mushroom cream in a puff pastry shell, paired with Oyster City Mill Pond Blonde Ale. The second course offers bourbon-brown butter grilled oysters—chargrilled New England oysters with bourbon-infused brown butter, cracked pepper, cilantro and lime zest—paired with Oyster City Hooter Brown Ale.
For the third course, Chef Hughes serves potato-wrapped Gulf black grouper with rustic root vegetable ratatouille, seared oyster mushrooms and Gulf Coast oyster cream sauce, paired with J Vineyards Brut Cuvee. The meal concludes with a chocolate oyster dessert featuring white and dark chocolate shells filled with dark chocolate mousse, strawberry-passionfruit "mignonette," white chocolate pearls and pearled sugar.
Tickets are $65 per person plus tax and gratuity, including four beverages and five courses. Seating is limited and reservations are required.
